Dr. Jin contributions to the 30 years’ innovative research and stellar leadership in food carbohydrate utilization for food product development. Through long-time efforts, he has successfully developed novel processes for the production of many food ingredients, including novel cyclodextrin derivatives, low-digestible starches, enriched rice products and functional sugars, and transferred the technologies to food enterprises for industrialization. Many products have become popular items on the contemporary health-food market. In addition, he has obtained the projects financially supported by the 12th National Key Technology R&D Program, the Major Program of National Natural Science Foundation, and the National High Technology Research and Development Program (863) of China.
